Description
This 4-ingredient date caramel recipe is a healthier, vegan alternative to traditional caramel. It’s naturally sweetened with dates, creamy from coconut milk, and perfect as a topping, dip, or spread. Ready in just 10 minutes, it’s ideal for breakfast, snacks, and desserts.
Ingredients
Medjool dates | 1 cup (pitted) | Soak in warm water if dry for smoother blending. |
Coconut milk | ½ cup | Substitute almond milk for a lighter option. |
Peanut butter | 1 tbsp | Optional, adds richness and nuttiness. |
Salt | ¼ tsp | Enhances the caramel flavor. |
Instructions
- Prepare the Dates: Pit the dates and soak them in warm water for 10 minutes if they feel dry.
- Add Ingredients to Blender: Place the dates, coconut milk, peanut butter (if using), and salt into a high-speed blender or food processor.
- Blend Until Smooth: Blend on low speed, gradually increasing to high. Stop occasionally to scrape down the sides. Add more milk if needed to adjust consistency.
- Taste and Adjust: Taste the caramel and adjust salt or sweetness as needed. Add a splash of vanilla extract for extra flavor if desired.
- Store: Transfer the caramel to an airtight container. Refrigerate for up to 2 weeks or freeze for up to 3 months.
Notes
- Consistency Tip: Add a tablespoon of milk at a time to achieve the desired texture.
- Flavor Variations: Add cocoa powder for a chocolatey twist or cinnamon for a spiced version.
- Uses: Drizzle over pancakes, dip with fruits, or spread on toast.
